An old vineyard restored, a natural amphitheater that becomes a vineyard, thinking about the wine we’ve always wanted on our table and managing to make it: passion becomes a project, the dream becomes reality, we have put ourselves into our bottle.
In July 2011, we took our first steps with the creation of our first wine, the Mamba Nero.
An important first step for the company, which, after years of work and constant improvements, began planting Sangiovese and Teroldego rootstocks in July 2018, despite the wrath of the Gods due to the intense heat. This became a cornerstone in the production of our wines, in the Montefioralle vineyard. In the same period, the commercial story of our company began with the bottling of the 2017 Mamba Nero, which was then introduced to the market: a soft and light wine, which sold out quickly.
The Montefioralle vineyard became fully productive in 2020, giving birth to Ferro Tagliente, our Chianti Classico. From here, the continuous production and commercial development of the company began, with the intention of improving even further to offer our guests not only high-quality wines but also the opportunity to visit us and taste them together with us—at zero kilometers—by the shores of our lake, with a view of the village of Montefioralle.
Our present and future are already written. The next steps involve expanding our product range, starting with the launch of our white wine, La Ninfea del Lago, made from grapes harvested from our vineyards in Greti and Montefioralle. These grapes, once destined for the production of Vin Santo, are now used to create a product we truly believe in.
In 2025, a new wine will also be unveiled, strongly desired by our Founder: an IGT wine made 100% from Teroldego Toscano grapes, which we will call Lo Scorbutico. We affectionately named this grape variety “Scorbutico” because, in August, it “turns its head” and shows us its back.
The purchase of the new Olmastrino estate will have a significant impact on both the company’s production capacity and the number of hectares dedicated to viticulture. We have already planted new rootstocks, both of the grape varieties currently used in the production of our wines and new varieties such as Merlot and Syrah, which will give us the opportunity to further diversify and experiment.
At Olmastrino, we are also building a new winery that will allow us, in the upcoming harvests, to begin the production of the Riserva and Gran Selezione of our Chianti Classico DOCG, Ferro Tagliente.
A project cannot truly be called such without clear diversification. Therefore, at our estates, we will not only focus on wine production, but also open up to wine tourism by creating a tasting room overlooking the beautiful landscapes of Chianti. Additionally, thanks to the renovation of the Olmastrino property, we will be able to welcome guests during the summer months, with the opening of a hospitality facility that can accommodate up to 25 guests.
Another initiative that will soon come to fruition is the creation of ICEV Fattoria Le Bonille, a unique example in the Chianti Classico region of qualified diversification in the business. A true campus, born from the collaboration between Fattoria Le Bonille and an important educational institution in Florence, with the goal of teaching students from around the world what lies behind a simple glass of wine. This will be achieved through basic and advanced courses in agronomy, oenology, and more, starting in 2026.
The dream of Fattoria Le Bonille, which began with our Founder’s passion for wine in 2011, quickly transformed into a reality, built on hard work and sacrifices. Those who live in the countryside and for the countryside know very well that the future can always be uncertain. But for those of us who are driven by passion and love for our land and products, we know there is nothing to fear. We will face new challenges with the courage that has always distinguished us, confident that in our bottles, on your tables, you will find all the love and passion we have always poured into them.
